My favorite cakes to do are the ones where the client comes in and says here’s a little inspiration, now do your thing. Which is exactly what Isabella did. When she came in about a year before her wedding in Fiesole, she wanted a cake that was romantic, simple, with a few lace details. In other words nothing like the cake you’re looking at here.
But 5 days before the wedding she asked for a last minute meeting and wanted to change everything. Daunting, yes. But also exciting. It’s an accommodation I can’t always make. However, in this case, it was possible. She showed me the table settings, the flowers, the candlesticks, and said she loved my cakes and wanted something baroque with gold. And then left…
Honestly, she had no idea what the cake would end up looking like. That’s faith. Just gold and baroque. I took the idea of the gold leaves from some tall candelabras she was using and the then embossed them to give them the very ornate baroque look. For the feature tier, I went with an all gold tier, hand embossed to pull off some of the color and create depth, wear, and contrast with and ornate vine pattern. On top, I placed a single decadent gold sugar rose.
Inside we did a lemon cake with raspberry coulis and raspberry mousse.
