You may or may not know, I’m a mom with 3 kids. All boys. Because of my work schedule, and the fact that their birthdays all fall in the summer, we usually throw their big party for  friends as an Easter Party. Designing the cake is always a challenge. First, the the kids spend most of the year watching me create amazing wedding cakes in my Florence labratory. Second, they are my biggest cheering squad. You may think because they’re boys, cakes are not big a deal to them. Not so. On any given day they are parading their friends to the window, and bragging mom is the best cake maker in Italy. So the Easter cake, for them, has a lot to live up to. Of course, the last thing my boys want is cute, sweet, pastel or pink. But it needs to big and Easter themed.

If you follow along on pinterest, you know, I am constantly grabbing inspiration wherever I can find it. So I was understandably delighted when I came across some doodle art on a trip to the Museum with one of my sons. Inside the book was a doodle design of a bunny. And I thought this is it. The way to do a funky, cool Easter cake that’s not too girly.

To create this cake, I hand painted the bunny and floral design with edible colors onto the main tier of the cake. Then replicated the floral pattern onto the sugar ribbon and finished it off with 2 of my signature sugar bows.

I love the way this cake has a light, modern, spring feel to it.
