Classic White Wedding Cake, Borgo Finocchieto

It doesn’t get much more classic than perfect white wedding cake. And then a pure white rose.

Elegant, sophisticated, simple. I love this design. It feels like it’s channeling a little Grace Kelly.

Created for a luxurious destination wedding at the Borgo Finocchieto in Italy, the idea was to create a wedding cake that was incredibly beautiful to flow with the rest of the wedding details , that had it’s own sense of drama, all while keeping it understated. No small challenge.

I started with the rose. Which needed to feel a little bit like sculpture. Since the look was white on white, and not huge,  I wanted the drama of the cake to be in it’s sharpness, depth, and movement. Those places where the light and shadows react.

Rather than going with just a simple white covering, I hand painted the white on white cake to create a visually deeper crisper look. So that even the simple white had intensity.

And then of course the flavor had to do the same thing. To tell the same story. So we went with a very simple clean flavor, vanilla and panna cotta. The panna cotta while being white and light, has this little bit of caramelized depth to it. So it was really a beautifully play on a classic white wedding cake.

On the other side of that, was the grooms cake. Which was equally classic, but a contrast. A rich dense chocolate fudge cake with an airy Italian meringue. Clean and naked except for a very delicate center (a little obsessed with shadows and light on this cake I guess) between the chocolate tiers. And then of course strawberries.
