Buttercream Wedding Cake at Villa Tolemei
I'm always hesitant to call a trend, because every couple is different, every wedding differnt. But one thing I'm seeing in my Florence labratory is a return to buttercream. Where for a few years everyone seemed to want pristine fondant covered cakes, there's definitly been an uptick in buttercream requests. Whether it's silky and smooth or rustic and textured, it's definitly making a return.
For this cake, buttercream was perfect. While the bride wanted a really elegant design to fit with her tented, chadelier driven wedding design - she also was all about nostalgia when it came to the wedding cake flavors.
In creating this cake I left behind all my Italian mousses and went back to 1950's Americana with 6 layer tiers of classic vanilla cake with a Texas fudge icing.
To complete the buttercream design, I decorated the cake with spring bouquets of sugar roses, ranunculus, posies and ortensia.
